Apple Banana Bread

A few weeks ago I decided to combine a couple of banana bread recipes together and make my own. I’ve made this apple banana bread three times now, and we always enjoy it. It’s rich apple banana bread with nuts and chocolate. But, if you don’t like nuts and/or chocolate in your bread, you can totally omit them. (Pssst!! I don’t like them too much (in this bread) either, but my boys do.) Or, you can also add another ingredient, like raisins. The last two times I made it with spelt flour and it turned out great. Here’s my apple banana bread recipe, if you’d like to try it yourself.

Ingredients: 1 cup whole grain (spelt or wheat) flour, 1 cup all-purpose (spelt or wheat) flour, 1 teaspoon baking soda, 1 teaspoon cinnamon, 2 teaspoons vanilla sugar, 1/3 teaspoon salt, 2 ripe bananas (mashed), 1 cup unsweetened apple puree, 2 tablespoons butter (melted), 2 eggs, 1/2 cup honey, 3/4 cup almonds (or walnuts or hazelnuts – roughly chopped), 3/4 cup (about 100g) dark chocolate (roughly chopped)

Instructions: Preheat oven to 180 degrees C (350 degrees F). Combine ‘dry’ ingredients (flour, baking soda, cinnamon, vanilla sugar, and salt) in one bowl. Mix ‘wet’ ingredients (bananas, apple puree, melted butter, eggs, and honey) in a second bowl.  Then stir the ‘wet’ ingredients into the ‘dry’ until everything is incorporated, and then mix in the chopped chocolate and chopped almonds (walnuts or hazelnuts). Line your bread pan with parchment paper and pour the mix into the pan. Bake for 45 to 55 minutes – until toothpick comes out clean – on the middle rack of your oven. Enjoy!
