Malibu Snow Cocktail Recipe

It’s this time of the year, when we visit each other more often and have a great time with all these Christmas and New Year’s parties. And I think it’s a great time to post a delicious (alcoholic) cocktail recipe, too. I named the cocktail ‘Malibu snow’. So, it has winter in its name. :)

For two glasses you’ll need: 2 shots Malibu coconut rum, ¾ cup coconut water (1 coconut), 6 or 7 good tablespoons vanilla ice cream and 2 good tablespoons (sweetened) whipped cream.

Instructions: Mix Malibu rum, coconut water and ice-cream in a blender until smooth. Pour into glasses and serve with a tablespoon of whipped cream on top of each glass. Enjoy!!

Apple Puff Pastry with White Wine Sauce

I’m posting another dessert recipe today. This was our dessert tonight and I’m posting the recipe right away, because the whole apartment still smells like Christmas…

To make this apple puff pastry dessert with white wine sauce, you’ll need: 4 (bigger) apples, 3 cinnamon sticks, 2 vanilla beans, 2 cups of brown sugar, a bottle of white wine (I recommend using dry white wine), 2 puff pastry sheets, 3 tablespoons of apricot jam and a tablespoon of butter (for the dish).

Here’s what you have to do:  Peel and remove the cores from the apples, then cut them into 8 slices. Place the apples in a pot and cover with wine. Take the vanilla beans and split in half, lengthwise. Using a knife, scrap out the vanilla seeds and then add the seeds and vanilla beans to the wine. Add the cinnamon sticks and sugar and boil for about 15 to 20 minutes. Take a baking dish and grease it with butter. Place one sheet of puff pastry in the bottom of the dish. Then remove the apples (with a skimmer) from the wine mixture. Cover the pastry in the bottom of the dish with apples and top with the other sheet of puff pastry. Place it in a preheated oven (200 degrees C / 390 degrees F) for about 25 minutes. Meanwhile, strain the half of the remaining wine mixture into a small saucepan, bring to boil, reduce heat and simmer for about 10 minutes. Add apricot jam, stir and simmer a little more (for about 5 minutes).

Serve the apple puff pastry dessert (warm) with this sweet wine sauce! And serving all this with whipped cream or vanilla ice cream, sounds even better to me. …like Christmas, I tell you.

 

Healthy Persimmon Cake

It is persimmon season here and I decided to try something new. So I made a healthy persimmon cake. A healthy and delicious cake! You’ll find the recipe below…

Ingredients: 1 cup whole wheat flour, 1 cup all-purpose flour, 2 cups persimmon pulp (from 8 to 10 ripe persimmons), 2 bananas – mashed, 3 eggs, ½ (or less!!) cup honey, 2 teaspoons baking soda, 1 teaspoon cinnamon, ½ cup raisins.

Instructions: Preheat oven to 180 degrees C (355 degrees F). Combine persimmon pulp, mashed bananas, eggs and honey in one bowl. In another bowl, mix together all-purpose flour, whole wheat flour, baking soda and cinnamon. Then mix wet ingredients into dry ingredients. Add the raisins and mix until well combined. Pour into parchment lined cake pan. Bake for 25 to 30 minutes. When done, allow to cool. Then remove the pan bottom and peel off the parchment paper. Transfer the cake to a serving plate right-side-up. Or serve it like a pie by cutting it in the pan and remove each piece and placing it on a plate.This way you can serve it warm too, which would probably bring out the flavors even more.
