Whole Grain Spelt Cookies

I had bought whole grain spelt flour for the first time last week. I had wanted to make whole grain spelt bread. But yesterday afternoon, after a cold walk outside, these spelt cookies seemed to be a better option. And today, here comes my easy recipe.

Ingredients (for about 40 cookies): 3 cups whole grain spelt flour, 1 cup butter (softened), 1 cup brown sugar, 2 eggs, zest of 1 small organic lemon, 1½  teaspoon soda, 2 pinches salt

Instructions: Leave the butter out of the fridge for an hour or more. Preheat oven to 180 degrees C (350 degrees F). In a bowl, mix together all the ‘dry ingredients’ (except lemon zest): spelt flour, sugar, soda and salt. In another bowl beat the butter until soft and creamy. While beating, add lightly beaten eggs first, lemon zest second. Pour the ‘dry ingredients’ into the ‘wet mixture’ and mix well. Then you’ll have to use your hands, because the dough will become harder(and maybe a little drier than normal). And then roll out the dough and use a cookie cutter to cut out the cookies. Place them on the parchment paper lined baking sheet and bake for about 15 minutes. Now I would normally say let cool completely, but these are really good while still warm, too. Enjoy!!

Salt Baked Fish Recipe

Today I’m posting a recipe that we tried last year for the first time and it’s just great. I’m sure this is one of the simpler recipes to make fish. We use this fish recipe all the time now. Also because we prefer the taste of fish with no herbs or spices and I really think you should try this, too. ;)

All you need to make the fish this way is: 2 boxes of kosher salt and 2 whole fishes (Well, this actually depends on how many portions you want to make and how big the fish is.). You can make trout, sea bream, sea bass or whatever fish you want. There are only two important things to remember about this recipe:  it has to be a whole fish (as fresh as you can get it) and leave the skin and scales on.

Preheat oven to 180 degrees C (360 degrees F).

Pour one-half box of salt into baking dish, lay the fish on the salt bed and completely cover it with the remaining salt (1 ½ box). Place it in the oven and bake for 25-35 minutes – depending on the size of the fish.

Meanwhile you can prepare your side dish(es) – whatever you want: potato, rice, veggies …

Once cooked, remove from the oven. Gently crack the salt crust and remove the crust from the top of the fish. Remove lumps of salt and then remove the skin on the top side of the fish – it should come off easily (in one piece), which means the fish is cooked perfectly – and take the fish fillet off the bones.

Serve with whatever side dish you’ve prepared. Enjoy!!

 

Easy Charlotte Royale Recipe

I made this Charlotte as a dessert for a dinner we had with friends last week. Everyone said it was really good, so I thought I would post the recipe here. It’s really easy to make.

Ingredients:

For the jam roll – 5 eggs, 5 tablespoons (brown) sugar, 5 tablespoons flour, 1 cup strawberry jam;

For the cream filling: 3 cups vanilla yogurt, 3 tablespoons powdered sugar, 2 teaspoons vanilla sugar, 2 tablespoons lemon juice, 5 teaspoons gelatin, 3 cups whipped cream

Instructions:

First make the cake roll – recipe here: Sour Cream and Jam Cake Roll. Just instead of sour cream and jam use only strawberry jam. And there is no need to moisten it before.

Second make the cream filling – use this cream filling recipe here: (Vanilla) Yogurt Cream Layer Cake.

Then cut the cake roll into about half inch slices. Take a bowl and place slices of jam roll around the sides, fitting them tightly together so that there are no spaces for the cream to seep through. Pour the cream filling into the prepared bowl, smooth the top and put in the fridge overnight or at least for a few hours. When you’re ready to finish the Charlotte, cover the bowl with serving plate and invert onto the center of the plate. Tap gently and lift the bowl off. That’s all. Enjoy!!
