Spring has Sprung

It’s been almost a month since I last posted. Wow!! I didn’t expect to put my blog on hold for this long. But, with a lot of work to do on one hand and this gorgeous spring weather on the other, it just turned out that way. My apologies for the silence. I’m coming back in the next days…

For now I just wanted to say thank you to all who sent me emails wishing me a happy birthday last week. Thank you!!

And my birthday also means that spring is here… Who doesn’t love spring?! I hope your week is going wonderfully so far…

 

Baked Yogurt Doughnuts

There are two reasons why I and my little guy baked these doughnuts today. The first reason is that carnival time is coming (in Europe) and this is the time when we make doughnuts. Not this kind of doughnuts, but I wanted to try something new and I like baking more than frying. (You can find our traditional doughnut recipe by clicking here.) And the second reason is that my little guy has been a little sick today. Making these (colorful) doughnuts was fun and it has certainly brightened our day. They’re easy to make AND delicious. I think they’re better without sprinkles, but kids love them. Our recipe is below.

Ingredients (for 16 doughnuts): 2 cups all-purpose flour, 2 cups yogurt, 5 tablespoons brown sugar, 2 eggs, 2 teaspoons baking soda, a pinch of salt, 1/2 cup (115g) butter (melted) for doughnuts + 2 tablespoons butter for (white) chocolate glaze + 2 teaspoons butter for greasing the tin, 1 2/3 cup (200 g) white chocolate for glaze, some sprinkles for decorating (optional)

Instructions: Preheat the oven to 180 degrees C (375 degrees F). First beat the egg whites to the soft peak stage. Then, while beating, add the yolks, sugar, yogurt, salt, baking soda, flour and melted butter(in that order). Grease doughnut pans. Transfer the dough to a piping bag and fill the doughnut pans about 3/4 full. Bake the doughnuts for 14 to 16 minutes. Carefully turn them out of the pan and let them cool completely. Melt white chocolate and two tablespoons of butter in double boiler until creamy smooth. Then coat each doughnut with the glaze and decorate with sprinkles, if desired. Allow to cool – until the chocolate glaze dries – or serve right away. Enjoy!!
