I had bought whole grain spelt flour for the first time last week. I had wanted to make whole grain spelt bread. But yesterday afternoon, after a cold walk outside, these spelt cookies seemed to be a better option. And today, here comes my easy recipe.
Ingredients (for about 40 cookies): 3 cups whole grain spelt flour, 1 cup butter (softened), 1 cup brown sugar, 2 eggs, zest of 1 small organic lemon, 1½ teaspoon soda, 2 pinches salt
Instructions: Leave the butter out of the fridge for an hour or more. Preheat oven to 180 degrees C (350 degrees F). In a bowl, mix together all the ‘dry ingredients’ (except lemon zest): spelt flour, sugar, soda and salt. In another bowl beat the butter until soft and creamy. While beating, add lightly beaten eggs first, lemon zest second. Pour the ‘dry ingredients’ into the ‘wet mixture’ and mix well. Then you’ll have to use your hands, because the dough will become harder(and maybe a little drier than normal). And then roll out the dough and use a cookie cutter to cut out the cookies. Place them on the parchment paper lined baking sheet and bake for about 15 minutes. Now I would normally say let cool completely, but these are really good while still warm, too. Enjoy!!
