Favorite Salads

This summer we’ve been eating lots of vegetables, especially in salads. And we still do. Our salads are mainly prepared with homegrown vegetables and I think we can be happy about that. Today I decided to post three simple salad recipes. I guess a simple lamb’s lettuce salad and these three (below) are our favorite salads at the moment. :)

Salad #1: cucumber with yogurt and dill (my favorite)

For two people I use: 2 medium cucumbers, 1 cup plain yogurt, 2 or 3 teaspoons dill and salt. Peel and slice the cucumbers (thin) and mix them with yogurt. Season it with dill and salt to taste.

Salad #3: cabbage and carrot salad

For two people I use: ¼ white cabbage – grated, 2 smaller carrots – grated, 2 tablespoons olive oil, 2 tablespoons freshly squeezed lemon juice and salt. Mix cabbage and carrots together, season the mixture with olive oil and lemon juice, add salt to taste.

  1. Your cucumber & dill salad is very similar to the Indian ‘Raita’. It is very flavorful and has a soothing effect for some of the more fiery curries :)
