Omelet with Lemon Balm

Here comes another easy (and healthy, I think) dinner recipe – recipe for omelets with lemon balm.

 

Ingredients (for 2 omelets):

2 eggs

5 tablespoons flour

5 tablespoons bread crumbs

1 cup milk

4 handfuls lemon balm, chopped

1 small teaspoons salt

4 tablespoons olive oil

Directions:

Break the eggs in a bowl and beat them. Add milk, flour, bread crumbs (in that order) and mix until smooth. Then add salt and lemon balm and mix it just a little more. Put a little oil in a frying pan, let it heat up. Pour a cup of the mixture into the pan and let it cook until it sets around the edges. Then flip and cook the other side. Serve hot.

We ate omelet with lemon balm and chicory salad for dinner tonight.
